In 2008, we began challenging ourselves not to polish Yamadanishiki.
After many attempts, we started brewing this sake in 2019 with Bizen Akaiwaomachi, but with a lower polishing rate.
It is a crisp, dry sake with no extraneous taste.
※It has been pasteurized once, but should nevertheless be stored in the refrigerator.
